This week?s recipe is very cheap and simple to make, AND it contains arguably one of THE best ?superfoods? out there!
Now, there aren?t really any true ?superfoods??there?s just food, and as different foods provide different nutrients it?s important to get a varied diet (you cannot live on blueberries and spinach alone!). However, if there was a food truly worthy of the title ?super? then it?s the main ingredient of this week?s Recipe of the Week.
This ingredient is not only high in protein and low in fat, it?s also high in?many other important nutrients ? including Vitamins A, D, E, K and B12, as well as minerals such as calcium, magnesium, zinc and iron. Because of this, including it in your diet on a regular basis can have the following benefits:
- Improved skin (particualrly acne and excema).
- Increased energy / decreased feelings of fatigue.
- Helps lower cholesterol.
- Helps strengthen the immune system.
- Helps keep bones strong and healthy.
- Helps protect your vision.

Well, the truth is, it?s Liver!!!
And our ?Supreme Superfood Supper? recipe is none other than good ol? Liver & Onions!
Okay, so we might have been a little bit sneaky in keeping the true name of this recipe out of the title but we just wanted to make sure you didn?t ignore this post! Liver tends not to be people?s favourite food, but hopefully after reading this you?ll be willing to give our recipe of the week a try and have this ?Supreme Superfood? for your supper!

The following recipe serves two:
Ingredients
300g fresh lamb?s liver (or beef? liver if you prefer) ?cut into fine slices
1 medium red onion (cut into fine slices)
1 tablespoon of garlic-infused extra virgin olive oil
salt & pepper to season

Method
N.B: Before preparing, place the liver in a small bowl, cover with milk and leave to soak for at least 1 hour (this is a REALLY important step if you?re not a great fan of liver as it helps to improve the flavour / reduce the bitterness).
1. Heat the oil a large frying pan.
2. Drain the milk from the liver and add the sliced liver and onions to the pan.
3. Fry for about 10 minutes (stirring throughout), or until the liver has cooked through.
4. Season to taste.
5. Serve any way you like! (we like to eat the liver and onions with a baked potato and steamed broccoli!)
